Chocolate-Covered Rice Krispie Treats: The Ultimate Oxnard Farmers Market Snack

A Childhood Favorite Gets a Jazzy Upgrade

Rice Krispie treats are one of those universally loved snacks that bring back memories for just about everyone. The snap, crackle, and pop of the cereal, the way the marshmallow stretches as you pull the treat apart, the sweet simplicity of it all. But when you dip them in chocolate and add beautiful toppings, they go from a simple after-school snack to a dessert that can hold its own on any treat table.

At Jazzy Sweet Treats, our chocolate-covered Rice Krispie bars are one of our signature items, and they are a staple in our assorted treat boxes that we sell throughout Oxnard. Customers tell us all the time that these treats remind them of their childhood, but with a grown-up twist that makes them feel special. Today we are sharing exactly how we make them so you can bring a little of that Jazzy magic into your own kitchen.

What You Will Need

For the Rice Krispie Base

  • 6 cups Rice Krispies cereal
  • 4 tablespoons unsalted butter
  • 1 bag (10 ounces) mini marshmallows
  • 1 teaspoon vanilla extract
  • Pinch of salt

For the Chocolate Coating

  • 8 ounces chocolate of your choice (milk, dark, or white)
  • 1 tablespoon coconut oil
  • Toppings: sprinkles, crushed cookies, edible shimmer, drizzle chocolate in a contrasting color

Step-by-Step Instructions

Step 1: Make the Rice Krispie Base

This is where the magic starts. Melt the butter in a large pot over low heat. Patience is key here because you do not want to brown the butter or scorch the marshmallows. Add the marshmallows and stir continuously until completely melted and smooth. The mixture should be glossy and pourable.

Remove from heat, stir in the vanilla and salt, then fold in the Rice Krispies cereal until every piece is coated. Work quickly because the mixture starts to set as it cools. Press it into a parchment-lined 9 by 13 inch pan. Here is a tip we swear by at Jazzy Sweet Treats: use a piece of parchment on top and press down firmly with your hands for a compact, even layer. If you skip this step, your treats will be too crumbly and will fall apart when you try to dip them. Let it cool completely, at least 30 minutes.

Step 2: Cut into Bars or Shapes

Once fully cooled, cut the slab into bars, squares, or use cookie cutters for fun shapes. We like to cut ours into thick rectangles, about 2 by 3 inches, which are the perfect size for dipping and gifting. For holiday orders, we sometimes use heart-shaped cutters for Valentine's Day or star shapes for Fourth of July celebrations.

A sharp knife dipped in warm water makes the cleanest cuts. Do not worry too much about the scraps because they make excellent snacking material while you work. We call those the baker's bonus around here.

Step 3: Dip in Chocolate

Melt your chocolate and coconut oil together using the microwave method, heating in 30-second intervals with stirring between each one. The coconut oil helps the chocolate stay smooth and gives it a beautiful shine when it sets. Be careful not to overheat because chocolate can seize up and become grainy if it gets too hot.

Dip each Rice Krispie bar halfway into the chocolate, or pour chocolate over the top and let it drip down the sides for a more rustic look. We find that dipping halfway shows off both the golden cereal bar and the glossy chocolate, which makes for a prettier presentation. Place on parchment paper immediately.

Step 4: Decorate

While the chocolate is still wet, add your toppings. This is your chance to get creative. Sprinkles, a drizzle of contrasting chocolate, crushed Oreo crumbs, or edible shimmer dust all work beautifully. Match your toppings to the theme of your event or the season. For baby showers we love pastel sprinkles, while crushed candy canes are perfect for the holidays. If you want to master that professional drizzle look, check out our guide on chocolate drizzle techniques.

One of our favorite combinations is milk chocolate with a white chocolate drizzle and a sprinkle of sea salt. The sweet and salty combination is absolutely irresistible.

Step 5: Set and Serve

Refrigerate for 15 minutes until the chocolate is firm. These hold up well at room temperature for several hours, making them perfect for outdoor events, party favors, and gift boxes.

A Treat Made for the 805 Lifestyle

We love seeing families enjoying our treats at the Oxnard Certified Farmers Market on Thursdays, at birthday parties in Ventura, and at community events throughout the county. Chocolate-covered Rice Krispie treats are the kind of snack that bridges generations. Kids go crazy for them, and adults cannot resist them either.

They travel well, they look impressive, and they are incredibly affordable to make in big batches. Whether you are packing them for a beach day at Oxnard Shores, bringing them to a potluck in Port Hueneme, or adding them to a gift box for a friend in Camarillo, these are a guaranteed crowd-pleaser. They pair beautifully with our white chocolate covered pretzels for the ultimate sweet and salty snack spread.
